Burgundy (Bourgogne) is one of France's greatest food regions, and nearly everything pairs with — or is cooked in — the local wine (source: compass_artifact_wf-5af489e6...).

§ 01Signature dishes

Signature dishes

  • Boeuf bourguignon — beef (ideally Charolais) braised in red Burgundy with lardons, onions, mushrooms.
  • Coq au vin — chicken (ideally Bresse) braised in red wine.
  • Oeufs en meurette — poached eggs in a red-wine sauce (there's a world championship at Clos de Vougeot / Clos de Vougeot).
  • Jambon persillé — parsleyed ham terrine in white-wine jelly (great with Aligoté).
  • Gougères — warm choux-pastry cheese puffs, the classic aperitif (served at Louis Bouillot — "La Verrière").
  • Escargots de Bourgogne — snails in garlic-parsley butter.
  • Cheeses — pungent Époisses ("king of cheeses"), plus Cîteaux, Soumaintrain, Délice de Bourgogne, and goat's Mâconnais.
  • Dijon mustard (Maille, Fallot), pain d'épices, crème de cassis and the Kir (cassis + Aligoté; Kir Royale with sparkling), Burgundy truffles, and Morvan wild mushrooms (source).

The region's flagship is Maison Lameloise in Chagny3 Michelin stars (chef Éric Pras); a lunch menu is a relative bargain (~€85), tasting menus ~€180–245 (source).
