Dijon Mustard
Dijon's signature condiment, still sold pump-fresh at two landmark boutiques — the historic Maille shop on Rue de la Liberté and the Edmond Fallot atelier on Rue de la Chouette.

Mustard is Dijon's edible emblem, and two boutiques let you taste it pump-fresh rather than from a jar:
- Boutique Maille — the original 1845 mustard boutique on Rue de la Liberté, where you can taste pump-fresh white-wine and truffle mustards drawn from stoneware crocks (source: dijon-france-research.md). Note Maille closes Sundays (source: dijon-france-research.md).
- La Moutarderie Edmond Fallot (boutique-atelier) — the last independent Burgundy mustard mill's Dijon shop, with a tasting "mustard bar," on Rue de la Chouette beside Notre-Dame (source: dijon-france-research.md).
