The Maison du Comté is an interactive museum in Poligny — the self-styled “capital of Comté” — devoted to how the Jura's great Alpine-style cheese is made, aged and graded, ending the visit with a tasting (source: jura-research.md).
Comté is produced in village fruitières across the Jura and aged for months in cellars; Poligny is a centre of that affinage trade.
