Cava
Spain's traditional-method sparkling wine — "the equivalent of Spanish Champagne," made from Macabeu, Parellada and Xarel·lo.
Remove the Champagne grapes of Pinot Noir, Chardonnay and Pinot Meunier, replace them with Spain's own Macabeu (aka Viura), Parellada and Xarel·lo, and you have the equivalent of Spanish Champagne. Like Champagne and the Crémants tasted on this trip (Crémant d'Alsace, Crémant de Bourgogne), Cava is made by the traditional method (needs verification — implied but not stated outright in the source).
