Remove the Champagne grapes of Pinot Noir, Chardonnay and Pinot Meunier, replace them with Spain's own Macabeu (aka Viura), Parellada and Xarel·lo, and you have the equivalent of Spanish Champagne. Cava even has quality and aging requirements similar to Champagne's (source: European Wine Exploration Map _ Wine Folly.pdf).
