Chablis

The town
Chablis is the pretty Chardonnay capital of northern Burgundy (Bourgogne), on the Serein near Auxerre, producing crisp, mineral whites (source: compass_artifact_wf-5af489e6...). Sights include the Collégiale Saint-Martin, and it is one of the new Cité des Climats et vins de Bourgogne sites (Chablis site opened 17 May 2023) (source).
It lies ~1.5–2 hrs northwest of the Côte d'Or, a worthwhile add-on for a longer trip (source).
